Recipe: Prune Apple Betty - Prep Time: 15 minutes - Cook Time: 1 hour - Ingredients: 4 cups of sliced cooking apples, peeled, 1/2 cup brown sugar, 1/2 tsp cinnamon, 1/8 tsp salt, 1 1/2 cups soft bread crumbs, 1/4 cup butter, melted, 1 cup Sunsweet(R) Prune Juice or PlumSmart(R), 1 Tbsp lemon juice, Whipped cream (optional) - Instructions: Preheat oven to 350F and butter a 1 1/2 to 2 quart shallow baking dish. Mix apples, brown sugar, cinnamon and salt in a medium bowl. Mix breadcrumbs and butter in another bowl. Place 1/3 of the buttered crumbs in the bottom of the baking dish. Top with 1/2 of the apples and prunes. Repeat layers, finishing with a layer of crumbs. Cover with foil and bake for 45 minutes. Remove foil and bake for 15 minutes or more. Serve warm with whipped cream, if desired. Makes 6 servings.
